Peanut Butter Protein Pancakes

These aren't your average pancakes! Packed with protein and naturally sweetened, they're both indulgent and nutritious.

Ingredients

  • 🥜1 cup oat flour (or blended oats)
  • 🥜1 scoop vanilla protein powder
  • 🥜1 tsp baking powder
  • 🥜1/4 tsp salt
  • 🥜1/2 tsp cinnamon
  • 🥜2 eggs
  • 🥜1/4 cup Saaja Smooth Peanut Butter
  • 🥜3/4 cup milk of choice
  • 🥜2 tbsp maple syrup
  • 🥜1 tsp vanilla extract
  • 🥜Coconut oil for cooking

Instructions

  1. 🥜In a large bowl, whisk together oat flour, protein powder, baking powder, salt, and cinnamon.
  2. 🥜In another bowl, whisk eggs, peanut butter, milk, maple syrup, and vanilla until smooth.
  3. 🥜Pour wet ingredients into dry ingredients and mix until just combined. Don't overmix!
  4. 🥜Heat a griddle or pan over medium heat and lightly grease with coconut oil.
  5. 🥜Pour 1/4 cup batter for each pancake. Cook until bubbles form on surface, then flip.
  6. 🥜Cook for another 1-2 minutes until golden brown.
  7. 🥜Serve warm with extra peanut butter, fresh fruit, and maple syrup.
