Spicy Thai Peanut Noodles
This vibrant dish brings together the perfect balance of sweet, spicy, and savory flavors in a creamy peanut sauce.
Ingredients
For the noodles:
- 🥜8 oz rice noodles or soba noodles
- 🥜2 cups shredded red cabbage
- 🥜1 red bell pepper, julienned
- 🥜1 cup edamame
- 🥜2 carrots, julienned
- 🥜Fresh cilantro for garnish
- 🥜Crushed peanuts for topping
For the peanut sauce:
- 🥜1/3 cup Saaja Crunchy Peanut Butter
- 🥜2 tbsp soy sauce
- 🥜1 tbsp rice vinegar
- 🥜1 tbsp maple syrup
- 🥜1 tbsp sesame oil
- 🥜1 clove garlic, minced
- 🥜1 tsp fresh grated ginger
- 🥜1-2 tsp sriracha (adjust to taste)
- 🥜3-4 tbsp warm water to thin
Instructions
- 🥜Cook noodles according to package directions. Drain and rinse with cold water.
- 🥜While noodles cook, whisk together all sauce ingredients in a bowl. Add water gradually until desired consistency.
- 🥜In a large bowl, combine cooked noodles, vegetables, and peanut sauce. Toss well to coat.
- 🥜Garnish with fresh cilantro, crushed peanuts, and lime wedges.
- 🥜Serve immediately or chill for a cold noodle salad.
