Spicy Thai Peanut Noodles

This vibrant dish brings together the perfect balance of sweet, spicy, and savory flavors in a creamy peanut sauce.

Ingredients

For the noodles:

  • 🥜8 oz rice noodles or soba noodles
  • 🥜2 cups shredded red cabbage
  • 🥜1 red bell pepper, julienned
  • 🥜1 cup edamame
  • 🥜2 carrots, julienned
  • 🥜Fresh cilantro for garnish
  • 🥜Crushed peanuts for topping

For the peanut sauce:

  • 🥜1/3 cup Saaja Crunchy Peanut Butter
  • 🥜2 tbsp soy sauce
  • 🥜1 tbsp rice vinegar
  • 🥜1 tbsp maple syrup
  • 🥜1 tbsp sesame oil
  • 🥜1 clove garlic, minced
  • 🥜1 tsp fresh grated ginger
  • 🥜1-2 tsp sriracha (adjust to taste)
  • 🥜3-4 tbsp warm water to thin

Instructions

  1. 🥜Cook noodles according to package directions. Drain and rinse with cold water.
  2. 🥜While noodles cook, whisk together all sauce ingredients in a bowl. Add water gradually until desired consistency.
  3. 🥜In a large bowl, combine cooked noodles, vegetables, and peanut sauce. Toss well to coat.
  4. 🥜Garnish with fresh cilantro, crushed peanuts, and lime wedges.
  5. 🥜Serve immediately or chill for a cold noodle salad.
