African-Inspired Peanut Stew
This one-pot wonder is packed with vegetables, plant-based protein, and warming spices. Perfect for cozy evenings!
Ingredients
- 🥜2 tbsp olive oil
- 🥜1 onion, diced
- 🥜3 cloves garlic, minced
- 🥜1 tbsp fresh ginger, grated
- 🥜2 sweet potatoes, cubed
- 🥜1 can (15 oz) chickpeas, drained
- 🥜1 can (14 oz) diced tomatoes
- 🥜3 cups vegetable broth
- 🥜1/2 cup Saaja Smooth Peanut Butter
- 🥜2 tsp curry powder
- 🥜1 tsp cumin
- 🥜1/2 tsp cayenne pepper
- 🥜2 cups spinach or kale
- 🥜Salt and pepper to taste
- 🥜Fresh cilantro for garnish
- 🥜Cooked rice or quinoa for serving
Instructions
- 🥜Heat olive oil in a large pot over medium heat. Sauté onion until softened, about 5 minutes.
- 🥜Add garlic and ginger, cook for 1 minute until fragrant.
- 🥜Add sweet potatoes, chickpeas, tomatoes, broth, and spices. Bring to a boil.
- 🥜Reduce heat and simmer for 20 minutes until sweet potatoes are tender.
- 🥜Stir in peanut butter until fully dissolved and creamy.
- 🥜Add spinach and cook until wilted, about 2 minutes.
- 🥜Season with salt and pepper to taste.
- 🥜Serve over rice or quinoa, garnished with fresh cilantro and a drizzle of peanut butter.
