African-Inspired Peanut Stew

African-Inspired Peanut Stew

This one-pot wonder is packed with vegetables, plant-based protein, and warming spices. Perfect for cozy evenings!

Ingredients

  • 🥜2 tbsp olive oil
  • 🥜1 onion, diced
  • 🥜3 cloves garlic, minced
  • 🥜1 tbsp fresh ginger, grated
  • 🥜2 sweet potatoes, cubed
  • 🥜1 can (15 oz) chickpeas, drained
  • 🥜1 can (14 oz) diced tomatoes
  • 🥜3 cups vegetable broth
  • 🥜1/2 cup Saaja Smooth Peanut Butter
  • 🥜2 tsp curry powder
  • 🥜1 tsp cumin
  • 🥜1/2 tsp cayenne pepper
  • 🥜2 cups spinach or kale
  • 🥜Salt and pepper to taste
  • 🥜Fresh cilantro for garnish
  • 🥜Cooked rice or quinoa for serving

Instructions

  1. 🥜Heat olive oil in a large pot over medium heat. Sauté onion until softened, about 5 minutes.
  2. 🥜Add garlic and ginger, cook for 1 minute until fragrant.
  3. 🥜Add sweet potatoes, chickpeas, tomatoes, broth, and spices. Bring to a boil.
  4. 🥜Reduce heat and simmer for 20 minutes until sweet potatoes are tender.
  5. 🥜Stir in peanut butter until fully dissolved and creamy.
  6. 🥜Add spinach and cook until wilted, about 2 minutes.
  7. 🥜Season with salt and pepper to taste.
  8. 🥜Serve over rice or quinoa, garnished with fresh cilantro and a drizzle of peanut butter.

  • 🥜Add bell peppers or cauliflower
  • 🥜Use different greens like collards or mustard greens
  • 🥜Top with roasted peanuts for extra crunch
