Peanut Butter Protein Pancakes
These aren't your average pancakes! Packed with protein and naturally sweetened, they're both indulgent and nutritious.
Ingredients
- 🥜1 cup oat flour (or blended oats)
- 🥜1 scoop vanilla protein powder
- 🥜1 tsp baking powder
- 🥜1/4 tsp salt
- 🥜1/2 tsp cinnamon
- 🥜2 eggs
- 🥜1/4 cup Saaja Smooth Peanut Butter
- 🥜3/4 cup milk of choice
- 🥜2 tbsp maple syrup
- 🥜1 tsp vanilla extract
- 🥜Coconut oil for cooking
Instructions
- 🥜In a large bowl, whisk together oat flour, protein powder, baking powder, salt, and cinnamon.
- 🥜In another bowl, whisk eggs, peanut butter, milk, maple syrup, and vanilla until smooth.
- 🥜Pour wet ingredients into dry ingredients and mix until just combined. Don't overmix!
- 🥜Heat a griddle or pan over medium heat and lightly grease with coconut oil.
- 🥜Pour 1/4 cup batter for each pancake. Cook until bubbles form on surface, then flip.
- 🥜Cook for another 1-2 minutes until golden brown.
- 🥜Serve warm with extra peanut butter, fresh fruit, and maple syrup.
